Characteristics and properties
The varieties of tomatoes are numerous and different in shape, thickness and color of the fruit, for different characters of the pulp and degree of ripeness. They can be divided into certain categories, depending on the use.
Salad, salad or table tomatoes: they are round,
with the smooth surface and/ or divided into a kind of segments.
Tomatoes for sauce or peeled, for industry: they are pyriform (stone-shaped), elongated, very fleshy and of an intense red color.
Tomatoes for juice or concentrates: they are roundish and have a very intense aroma. Those suitable to be dried or placed in oil have small, red or yellow fruits, round, oval or pyriform, often clustered.
Composed of 94% water, tomatoes are rich in vitamin C, beta-carotene and potassium. They also contain vitamins B and E, folic acid, iron, phosphorus and calcium.

In the processing center, particular attention is paid to the times and methods, so that the product arrives fresh to be packaged and placed on the market.
