Characteristics and properties

Vegetable whose edible part consists of young shoots or shoots, green, white or violet, which are formed by a transformed root, underground, called “paw”, capable of storing the plant’s nutrients. It has depurative properties and a high content of calcium, phosphorus and potassium.

Asparagine is one of the amino acids present in abundance, which is used for the manufacture of numerous protein substances and therefore for the processing of sugar. It also contains folic acid, manganese, vitamin A and B and is low in sodium.
