Production Process

The production process in organic farming in Puglia: a model of sustainability

Our production process begins with a meticulous planning of the crops we intend to cultivate in the following year. This plan includes a rotation of soils to preserve soil fertility, reflecting the principles of organic farming and eco-sustainability. Planning is done well in advance, considering the orders of seedlings and the specific needs of each crop.

Next, we proceed with sowing or planting, depending on the product. Our cultivation techniques respect the natural cycles of plants, ensuring healthy and sustainable development. All the necessary agricultural processes are carried out with care, from the growth to the manual collection of the products, with the exception of the tomato and the wheat, for which we use mechanical harvesting methods.

After the harvest, the tomato is sent directly to the canning industry, the wheat to the mill, while asparagus, cauliflower and broccoli are transported to our farm to be stored in cold storage. Here, following the daily orders, we proceed with the processing and packaging, using dedicated lines for broccoli and cauliflower and another specific for asparagus.

The processed products are then recessed, palletized and stored in cold rooms until shipping to our customers, always with refrigerated trucks to ensure the freshness of the product.

Almonds follow a different production process: they are harvested and immediately transported to the facility, where they are quickly hulled and dried, and then transferred to ventilated storage silos. This is followed by shelling, calibration, and packaging according to the needs of our clients. This production system is designed to preserve the quality characteristics of the product.
